I have noticed that I am getting a lot of visits for this youtube video on youtube Channel http://www.youtube.com/watch?v=3VOUTYvxB7s and some comments are not nice at all. I wrote at the bottom of the video “HOW TO MAKE CHAPATI DOUGH USED ON THIS VIDEO VISIT http://tasteoftanzania.com/blog/2011/02/03/tanzanian-chapati/“; but people are not reading anything, they just rush to comments. As the heading of the video says “HOW TO COOK CHAPATI ON A STOVE TOP” meaning the video only show how to cook the already knead and rolled chapati on a stove. Last: This is the first video ever made by myself for Taste of Tanzania. as you can see, I did not show my face, I was just trying the idea of starting videos for the website. My voice at that time you can tell was not as confident as now. Please try to understand me on this video and I hope the youtube visitors will be nice in the future. MINGI LOVE Miriam Rose with Taste of Tanzania

I only bought Cardamom powder only once, when i added it to my pilau, i did not taste any cardamom at all. Recipes like Pilau and Tea masala and many more depends a lot on the taste and aroma of cardamom. If your cardamom taste like something else and does not have that nice sweet like smell, then your recipe will not be the same. The only way to have the real cardamom flavor and aroma is to ground your own at home. Store it in a very tight container to keep fresh.

I have decided to make this video to show visitors from abroad how to make coconut milk the easy way; but also, for those who like organic ingredients, you don’t have to spoil your recipe by adding canned or powder coconut milk. This is very easy, and you can get the coconut grater from any Asian store. If they don’t have one, ask them to import for you. Most of the stores will be glad to order one for you. The following is East African coconut grater:

I am sure you are wondering why I am talking about “nazi” in this website. Apparently nazi is a Swahili word for coconut. Mbuzi ya nazi is a Swahili word for coconut grater. The above photo is a coconut grater that I use in my house, I came with from Tanzania. In Tanzania grating coconut is not only the preparation of an ingredient for our recipes, but it is also an art. For example; some towns have competitions to find the best and fastest women to grate coconut. Mind you, one must grate only the white part of the coconut, which is not easy if you do not know how to grate using mbuzi ya nazi. Visit http://www.youtube.com/user/TasteofTanzania?blend=13&ob=5#p/u/4/M0XmM05_MRU to see how it is used. Nowadays you can find electric coconut graters. As modern as I would like to be, I still prefer to use my mbuzi ya nazi, or unless I get industrial electric coconut grater. Visit here on youtube to see a coconut greater that can be used on the table/counter. Sijaona sababu ya kutafsiri maongezi ya leo, maana sisi wote tunajua mbuzi ya nazi ni nini. Lakini ningependa kuwajulisha kuwa mnaweza kupata mbuzi ya nazi inayotumia umeme. Sijafatili [...]

How do you peel your tomatoes? Are you using a Knife? Then you should read this. I have come to realize that a few of my friends and family are peeling tomatoes using a knife. Just in case if there are many people out there who are doing the same thing; here is the easiest way to peel tomatoes. You only need water, pot and tomatoes. In a big pot boil enough water for the tomatoes. Remove from heat; add tomatoes. Do not cover the pot. If the tomatoes are very ripe leave in hot water 2 minutes; if are not very ripe, 3 to 5 minutes would be enough. Use a big spoon to remove the tomatoes from hot water to a big plate. While still hot, use your hands to peel the tomato skin off the tomatoes. Do you see how easy it is? If you cannot work with very hot food, allow the tomatoes to cool down just a bit before peeling. It will still peel well if the tomatoes are very ripe. One last thing. Do not leave the tomatoes In hot water for too long. You can refrigerate for two days after you peel, [...]
